Vegan Cool Ranch Dorito Tacos! Printable recipe here
(adapted from this recipe)
Ground “beef”- makes about enough for 8 tacos
What You’ll Need:
1 bag (about 1 lb) of soy ground beef crumbles (can be replaced with a cauliflower/walnut blend)
2 cloves garlic, minced
1 packet of taco seasoning
1 tbsp olive oil
3/4 cup water
Directions:
Heat olive oil in a sauce pan and add the garlic on medium heat. Let cook for about 1 minute.
Add in ground crumbles, taco seasoning and water and stir the mixture to distribute the oil and garlic evenly.  Heat until the crumbles are warm and fully thawed.
Cool Ranch Taco Shell
What You’ll Need:
3 corn tortillas
2 tbsp olive oil
1 tsp parsley
1 tsp dill
1 tsp garlic powder
1 tsp onion powder
1 tsp chives (i used minced onion since i didn’t have chives)
1/2 tsp salt
1/4 tsp black pepper
2 tsp nutritional yeast
Directions:
Preheat oven to 350 degrees Fahrenheit
Microwave the tortillas for 15-20 seconds so they bend easily
Brush olive oil on 1 side of each tortilla
Put the remaining ingredients in a small bowl and stir.  Then sprinkle even on the oiled side of each tortilla.
Drape the tortillas over the rack of the oven, so that the sides hang straight down. Cook for 10 minutes, then remove from oven.
"Cheese" Sauce- optional
What You’ll Need:
1 1/4 cups unsweetened almond milk
1/2 cup nutritional yeast
2 tbsp cornstarch
1 tbsp tahini
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 tsp taco seasoning
1/8 tsp salt
Directions:
Combine all ingredients in a sauce pan and whisk.
Heat on high until the sauce boils, then turn heat to low.
Let the sauce simmer until it gets thick, then remove from heat.
Serve warm.
